Certain sources state: August 1, Emancipation Day in Jamaica is a public holiday and part of a week-long cultural celebration, during which Jamaicans also celebrated Jamaican Independence on August 6, 1962. Both August 1 and August 6 are public holidays... According to author Wilson, Amber, traditionally, people would keep at a vigil on July 31 and at midnight ring church bell and play drums in parks and public squares to re-enact the first moments of freedom for enslaved Africans. 

 

 

In addition to the week-long celebration, there is always space for food, drinks, and dancing. However, let us focus on the food.  

 

 

There is a numerous selection of food choices at events like these. The choices include Soups, Escavites Fish, Festival, Ackees & Salt Fish, Curry Goat, Fry Chicken, etc... I can go on. One of the main dishes is our Jamaican Jerk. This can be Jerk: Chicken, Pork, or Seafood. 

 

 

At this point, you must be wondering why the Jerk is so essential. The Jerk method is a technique taught to us by our African Ancestors (Slaves). The origin of this cooking method is from the colony of Taino of the Caribbean. These people were in the Caribbean before the African Slave arrive. Upon the slaves' arrival and settling, the Taino people taught this method of cooking. 

 

 

Jamaican Jerk is famous for slow cooking, the use of Pimento (green) wood, Pimento beans aka allspice, and the Scotch Bennett Peppers (spicy and flavorful). Most of all, the smokey flavor!

 

 

We understand the modern time, and we cannot celebrate this holiday the way we would like to; however, we can still cook our favorite meals with a twist.
